MANUFACTURER'S ADVICE
Excellent with grilled fish, with white meat such as rabbit, and red meat with good marbling. It goes well with medium and long-aged cheeses. We recommend trying it with Kobe dishes.
VINIFICATION
careful harvesting of the grapes. Once destemmed and crushed, the grapes are placed in fermenters for an initial cold maceration of a few days. This is followed by alcoholic fermentation at a controlled temperature and in the presence of the skins, which are wet daily and processed gently. During the contact between the must and the skins there will be a natural transfer of aromas, color and tannins, essential for subsequent aging. A part of Garganega ages in amphorae for at least 6 months before being bottled. The other varieties are aged in stainless steel tanks on fine deposits with batonnage work. Aging for at least 6 months in glass.
ORGANOLEPTIC CHARACTERISTICS
Light orange yellow color with golden reflections. On the nose, complex and intriguing, notes of yellow peach, candied fruit and chamomile. On the palate, rich, dry, with a good alcohol content that accompanies an elegant tannic note; yellow fruits well present.
