MANUFACTURER'S ADVICE

Excellent with grilled fish, with white meat such as rabbit,
and red meat with good marbling. It goes well with medium and long matured
cheeses. We recommend trying it with Kobe-based dishes.

VINIFICATION

careful harvesting of the grapes. Once destemmed and pressed, the grapes are placed in fermenters for an initial cold maceration of a few days.
This is followed by alcoholic fermentation at a controlled temperature and
in the presence of the skins, which are wetted daily and processed delicately.
During contact between the must and the skins there will be a natural transfer
of aromas, color and tannins, essential for subsequent refinement. A part of
Garganega ages in amphora for at least 6 months before being bottled. The
other varieties refine in stainless steel tanks on fine deposits with batonnage
works. Aged for a minimum of 6 months in glass.
