MANUFACTURER'S ADVICE

Savor it in its entirety, to experience the emotion of a great Classic Method, the result of great work and historicity. Excellent with caviar, oysters and raw red scampi.

VINIFICATION

careful harvesting of the grapes, which are destemmed, crushed and soft pressed as for white winemaking. We proceed with careful cleaning of the musts, followed by alcoholic fermentation at a controlled temperature and refinement on the fine deposit. A second fermentation in the bottle is carried out and a very long refinement on the yeasts for 130 months, 11 years, on a horizontal stack closed in cork. Subsequently we proceed with manual remuage on pupitre followed by manual disgorgement, with topping up with the same wine, without any dosage.

ORGANOLEPTIC CHARACTERISTICS

Bright straw yellow with extremely fine and persistent perlage. On the nose it is layered, intense and fragrant with hints of bread crust and very delicate yeast notes, with a fine and elegant unevolved tertiary, which suggests a rich and powerful wine. In the mouth it is decisive, creamy and harmonious, mineral and savory, with citrus notes. It envelops the palate but is immediately lightened by the creaminess of the delicate effervescence. It finishes slightly dry without harshness, to support a long and flavorful finish.
